Iron Skillet's German Potato Dumplings
- 8 medium potatoes
- 3 egg yolks, beaten
- 3 tbsp corn starch
- 1 cup bread crumbs
- salt and pepper to taste
- flour as needed
- Peel and boil the potatoes until soft. Drain and mash smoothly.
- Blend in yolks, cornstarch, bread crumbs, salt and pepper. Mix thoroughly and shape into dumplings. You may need flour to help hold the dumplings together.
- Roll each dumpling in flour and drop into boiling water. Cover and cook for about 15-20 min. Drain and serve.
