Ingredients

Meal #1: Meatloaf for Meatloaf Lovers


Cupboard Check/Grocery List:


  • Butter
  • 1.75 lbs. Ground Beef
  • 1 quart milk
  • Box of Mashed Potatoes
  • 1 package egg
  • 1 Bag of Salad
  • 1 bottle ketchup
  • Green Beans
  • Cream of Mushroom Soup (optional)
  • Italian Bread Crumbs
  • Soy Sauce (optional)
  • ½ cup Onion
  • Brown Sugar (optional)
  • ½ cup Bell Pepper
  • Salt & Pepper
  • Salad Dressing
  • Salad Garnishes (raisins, nuts, cheese, croutons)


  1. Add chopped onion and bell pepper to ground meat and follow instructions on meatloaf mix package substituting Italian Bread crumbs for cubed bread.
  2. Form Meat Loaf mixture into a loaf and place in oiled baking pan.
  3. Layer glaze of your choice on top and bake at 350 for 25-35 minutes.
  4. Serve with mashed potatoes and green beans and side salad.



Meal #2: Italian Meatball Sandwiches



Cupboard Check/Grocery List:


  • Eggs
  • 1 ¾ lbs. (plus or minus) Ground Meat
  • Salad Dressing
  • Meat Loaf Mix
  • Salad Garnishes
  • Italian Bread Crumbs
  • Milk
  • 1 tube pork breakfast sausage
  • Onion
  • Bell pepper
  • Provolone Cheese, slices
  • Dill Pickle Spears
  • Chips
  • Fruit of Choice
  • Bag of Salad
  • Marinara Sauce/Spaghetti Sauce
  • Garnish for Sandwich: Black olives, sliced onion, parmesan cheese
  • Sub Sandwich Buns


  1. Combine ½ cup bell pepper, ½ cup onion to ground meat. Prepare ground meat according to the directions on the meatloaf mixture substituting Italian Bread Crumbs for crumbled bread.
  2. Mix in well 1 tube of pork breakfast sausage.
  3. Form meatballs and cook using preparation method of choice.
  4. Heat Marinara sauce in a sauce pan.
  5. Slice open Sub sandwich buns. Place meatballs on sub bun, ladle on marinara sauce, top with provolone cheese and additional garnishes.
  6. Serve with chips, dill pickle spear and of course a fresh garden salad. ENJOY!!!


Meal #3: Shepherd’s Pie


Cupboard Check/Grocery List:



  • Eggs
  • 1 ¾ lbs. (plus or minus) ground Beef
  • Milk
  • Meat Loaf Mix
  • Ketchup
  • Italian Bread Crumbs
  • Brown Sugar (optional)
  • 1 Box Mashed Potatoes
  • Cream of Mushroom Soup (Optional)
  • 4 oz. Sour Cream
  • Soy Sauce (Optional)
  • 4 oz. Cheddar Cheese, Shredded
  • Salad Dressing
  • Bag of Salad
  • Salad Garnishes
  • Frozen Corn and Peas (I prefer Green Giants with Flavor Crystals)
  • butter
  • ½ cup Bell Pepper
  • ½ cup Onion


  1. Add bell pepper and onion to ground meat mixture.
  2. Prepare ground meat according to package instructions on Meat loaf mix.
  3. Before baking top meat loaf with brown sugar glaze or mushroom gravy.
  4. After cooking let meatloaf cool; crumble meat loaf in the bottom of a greased baking dish.
  5. Prepare peas and corn according to directions. If peas and corn are prepared in water, drain off all water before layering them onto the Shepherd’s Pie.
  6. Prepare Mashed Potatoes (approx. 8 servings). Stir in sour cream and ½ of the cheese to mashed potatoes.
  7. Layer crumbled meat loaf with peas and corn first and then top with thick layer of mashed potatoes. Top with cheese and bake at 350 for 20 - 25 minutes or until heated through.
  8. Serve with fresh garden salad. A Family Favorite!!!
