Ingredients

  • Salt & pepper
  • 5 pounds ground meat
  • Water
  • 2-large onions
  • Brown sugar
  • 1-8oz. cheese, grated
  • Worcestershire
  • 2-cans cream of mushroom soup
  • 2 garlic cloves
  • 1-can enchilada sauce
  • Salad dressing
  • 1-package corn tortillas
  • Salad fixings
  • 2-bell peppers

  • 1-package celery stalks

  • 1-small package white rice-slow cook

  • 1-bottle chili sauce

  • 1-6oz. tomato paste

  • 1-package hamburger buns

  • 1-box Spanish rice

  • 1-bag tater tots

  • 1-fruit of choice (canned or fresh)

  • 1-bag salad

Directions

Start stacking:
  1. Begin with 5 pounds of lean ground meat. Set aside 1/3 of the ground meat for meal #1 (uncooked).
  2. Dice 3 cups bell pepper, 1 ½ cups onion, 1 ½ cups celery.
  3. Combine 1 cup bell pepper, ½ cup onion, ½ cup celery to ground meat for meal #1- follow directions for meal #1.
  4. In large skillet brown ground meat for meals #2 & #3.
  5. Add remaining diced vegetables and let cook until vegetables are tender.
  6. Allow meat to cool and store in well marked freezer bags until time to prepare.


*In the instructions for meal stacks #2 and #3, the term ‘prepared ground meat’ is referring to the meat that is prepared while following the start stacking instructions.







Meal #1- Bell Pepper Casserole w/Salad & Fruit

  • Salt & pepper
  • 1 ½ pounds ground meat
  • Water 2 cups
  • 1 cup diced bell pepper
  • Salad dressings
  • ½ cup diced onions
  • Salad fixings
  • ½ cup diced celery

  • 1-can cream of mushroom soup

  • 1-cup white rice (uncooked)

  • 1-bag salad

  • 1 fruit of choice



  1. Preheat oven to 325 degrees.
  2. In large bowl combine ground meat, all diced vegetables, cream of
    mushroom soup, 1 cup white rice and 2 cups water (salt and pepper to taste).
  3. Transfer into a large casserole and cover tightly with foil.
  4. Bake for 2 hours or until all liquid is absorbed.
  5. Serve with salad and fruit of choice.


Meal #2- Sloppy Joe’s and Tater Tots

  • 2 tbs. worcestershire
  • 2 ½ pounds prepared ground meat
  • 2-3 tbs brown sugar
  • 1-12 oz. bottle chili sauce
  • ¼ tsp. pepper
  • 1-6oz. can tomato paste

  • 1-package hamburger buns

  • 1-bag frozen tater tots


  1. In large skillet combine prepared ground meat with remaining ingredients. (except hamburger buns and tater tots)
  2. Bring to a boil- reduce heat and simmer 15-20 minutes.
  3. Serve on hamburger buns with tater tots.


Meal #3- Enchilada Casserole

  • 2 cloves garlic chopped
  • 1 pound prepared ground meat

  • 8 oz. grated cheese

  • 1-can cream of mushroom soup

  • 1-can cream of chicken soup

  • 1-can enchilada sauce

  • 1-package corn tortillas

  • 1-box Spanish rice


  1. In large skillet combine prepared ground meat with 1-can cream of mushroom soup, 1-can cream of chicken soup, 1-can enchilada sauce.
  2. Cook on medium-low heat for 15-20 minutes.
  3. In casserole, tear tortillas in fourths and arrange in dish.
  4. Add part of the meat mixture.
  5. Repeat.
  6. Top with grated cheese and place in 350 degree oven until bubbly. About 20 minutes.
  7. Serve with Spanish rice.
