- 1 medium onion- chopped and sautéed in 1 Tbsp vegetable oil
- 1 bag prepared slaw mix
- 1 28oz. can chopped tomatoes
- 1 10 1/2 can beef broth or consommé
- 1 15oz can pinto beans
- 2 cups water
- 1 lb. smoked sausage
Sauté onion in a large soup pot. Add remaining ingredients and simmer for one hour. Serve with cornbread or crusty rolls.
