Caesar Salad

Ingredients

  • 1 large head romaine lettuce cleaned and chopped set aside in large bowl
  • 3/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 t Worcestershire sauce
  • 1/2 t salt
  • 1/4 t dried mustard
  • 1 large garlic clove crushed
  • 1 med lemon cut in half
  • Freshly ground black pepper
  • 1/2 cup grated parmesan cheese
  • commercial garlic croutons
  • 1 (2 ounce) can anchovy fillets, drained (optional)

Directions

Combine olive oil and next 5 ingredients in a jar. Place lid on the jar, and shake vigorously. Pour over romaine, then squeeze the lemon juice on as well, make sure that you catch the seed. Toss. Place salad on serving plates (4), then garnish with cheese, croutons, and anchovy fillets. Serve immediately.
