Crab Parmesan a la Roi


  • 3 T butter, unsalted
  • 1 Package (8oz) Crab substitute, chunks or shreds
  • 1 Cup grated Parmesan
  • 3/4 Cup Half & Half
  • Cracked Red Pepper (to taste)
  • 2 T Rum (151 proof)
  • Kluski's homestyle noodles or spinach fettuccine, prepared al dente


Prepare noodles first! Melt butter over medium heat in medium skillet. Add crab & stir to heat through. Cover crab with Parmesan. Cover parmesan with half & half. Add cracked red pepper. Stir to heat through and melt cheese into half & half. Do not boil! Float bowl of a large metal spoon in center of almost simmering skillet. Pour rum into spoon, heat slightly, then ignite. Stir rum into sauce and continue to stir until sauce becomes smooth. Do not boil! Serve over noodles. Entire process (after noodles) takes less than 4 minutes! Serves 2-3.
