- 2 salmon filets (6 oz each)
- 2 T mayonnaise
- 1/2 c. finely chopped pecans
- 1/3 c. seasoned bread crumbs
- 2 T grated parmesan cheese
- 1 T minced fresh parsley
- 1 T melted butter
Place salmon (skin side down) in a greased 11x7x2 pan and spread 1 T mayo
over each filet. Combine pecans, bread crumbs, cheese, parsley and butter
in small bowl. Mix well and spoon evenly over top of salmon and press down.
Bake 425 degrees for 10 to 20 minutes or until fish flakes easily.
