Italian White Fish Meal Stack

Ingredients

  • Onion powder
  • Garlic powder
  • Salt & Pepper
  • Butter
  • eggs
  • 20 (4 oz. each) whitefish fillets
  • 1½ c. finely chopped celery
  • 1 c. plus 1 T. finely chopped green onion
  • 1 c. lemon juice
  • 1 c. Italian dressing
  • Corn Tortillas
  • ½ c. yellow squash, chopped
  • 2 T. Cilantro, chopped
  • ½ c. diced ripe cantaloupe (room temperature)
  • 1 c. Crab delight imitation crab meat
  • ½ c. salsa
  • ¾ c. grated Monterey Jack Cheese
  • ½ c. onion, chopped
  • 1 box mashed potatoes
  • Ritz crackers
  • Wheat hamburger buns
  • Lettuce, tomatoes (garnish)
  • 1 bag salad (opt. side dish)
  • Rice Pilaf (opt. side dish)
  • Fresh Fruit (opt. side dish)
  • Tortillas Chips (opt. side dish)



Let's Start Stackin':

  1. Place 6-7 whitefish fillets in a 9x13 baking dish in single layer.
  2. Sprinkle fillets with salt, pepper and onion garlic powder to taste.
  3. Spread ¼ c. finely chopped celery and ¼ c. finely chopped green onion
    over fish.
  4. Pour ¼ c. Italian Dressing and ¼ c. lemon juice over fillets.
  5. Cover tightly with foil and bake at 350° for 20 minutes or until fish
    flakes easily.
  6. Repeat process with remaining fillets.
  7. Enjoy Meal Stack #1 (Baked Whitefish Italiano) while allowing additional
    fish to cool.
  8. Drain off liquid from cooled fish. Divide fish in half and place reserves
    in a well marked freezer bag. Store appropriately until time to prepare Meal
    Stacks #2 and #3.

*Cooked fish will keep in the refrigerator 3-5 days and may be stored in the
freezer 4-6 months.



*Gently re-heat reserves on a low setting in the microwave when time to
prepare Meal Stacks #2 and #3

Directions

Meal Stack #1: Baked Whitefish Italiano

  • Salt & Pepper
  • Onion powder
  • Garlic powder
  • Salad dressing
  • Salad fixings
  • 8 (4 oz. each) whitefish fillets
  • ¼ c. celery, chopped finely
  • ¼ c. green onion, chopped finely
  • ¼ c. Italian dressing
  • ¼ c. lemon juice
  • rice pilaf (opt. side dish)
  • 1 bag salad (opt. side dish)


Sprinkle fillets with salt, pepper and onion garlic powder to taste. Arrange in single layer in a shallow baking dish. Sprinkle with mixture of remaining ingredients. Bake covered with foil at 350° for 20 minutes or until fish flakes easily



Meal Stack #2: Seafood Tacos: You will need 1 cup reserved Baked Whitefish Italiano.

  • 1 T. green onion, chopped
  • ½ c. celery, chopped
  • ½ c. yellow squash, chopped
  • 2 T. cilantro, chopped
  • ½ c. cantaloupe, chopped and room temperature
  • 1 c. crab delight
  • ½ c. mild salsa
  • ¾ c. Monterey jack cheese, shredded
  • 1 package corn tortillas


Spread corn tortillas with melted butter and keep them covered after
warming them. Add 1T. butter and 1 T. corn oil to a sauté pan over medium low heat. When hot, add green onion, celery & squash cook for 3 minutes. Add cilantro, salsa and blend together. Add Monterey jack cheese, reserved whitefish and crab delight. Add diced cantaloupe, gently stir and remove pan from heat. Fill warmed tortillas with mixture and fold. Place seam side down in a warm serving dish. Serve immediately.



Meal Stack #3: Seafood Patties: You will need 3 cups reserved whitefish.

  • 2 Eggs
  • Salt & Pepper
  • Butter
  • 1 Onion, chopped
  • ½ c. mashed potato flakes
  • 1 c. Ritz crackers, crushed
  • 1 package wheat buns


Blend together all ingredients (except butter) Melt butter (or vegetable oil) about 2 T. in a large fry pan. Form patties and fry in the oil or butter 3-5 minutes per side. Serve warm or cold Garnish with ketchup, tarter sauce or dill sauce.



*Delicious served on a whole wheat bun.
