Baked Tomatoes With Basil, Parsley, and Parmesan


  • 2 large vine-ripened tomatoes, cut in half, scoop out center
  • 1/4 cup minced fresh herbs (basil and parsley)
  • 1/2 cup bread crumbs
  • 1/2 cup shredded Parmesan cheese
  • 2 garlic cloves, minced
  • Pinch of salt
  • pinch freshly ground black pepper
  • 5 tablespoons extra virgin olive oil


Preheat oven to 350 degrees F. Put the tomatoes in a nonstick dish. Combine the herb, bread crumbs, garlic, salt, pepper, and 3 tablespoons of oil in a bowl. Mix and put spoon full of the mixture into center of tomato. Put spoonful of olive oil over each tomato half. Bake for 30 minutes. Tomatoes will be soft. Take disk out of oven and sprinkle each tomato half with a generous portion of Parmesan cheese. Continue baking for an additional 5 minutes until cheese melts. Serves 4.
