Shrimp Salad Finger Sandwiches
- 2 1/2 lbs shrimp, peeled, deveined, cooked and coarsely chopped
- 2 1/2 tsp salt
- 2 T lemon juice
- 1/2 tsp minced onions
- 1 cup chopped celery
- 1/2 tsp celery seed
- 1 tsp hot sauce
- 1 cup mayo, or enough to bind the mixture
- Sliced bread
- In large bowl, combine shrimp, salt and lemon juice. Add onions, celery,
celery seed, hot sauce and mayo.
- Spread mixture on bread slices, trim crusts and cut into desired shapes.
