Shrimp Salad Finger Sandwiches

Ingredients

  • 2 1/2 lbs shrimp, peeled, deveined, cooked and coarsely chopped
  • 2 1/2 tsp salt
  • 2 T lemon juice
  • 1/2 tsp minced onions
  • 1 cup chopped celery
  • 1/2 tsp celery seed
  • 1 tsp hot sauce
  • 1 cup mayo, or enough to bind the mixture
  • Sliced bread

Directions

  1. In large bowl, combine shrimp, salt and lemon juice. Add onions, celery,
    celery seed, hot sauce and mayo.
  2. Spread mixture on bread slices, trim crusts and cut into desired shapes.
