The Gourmet Cafe Black Bean Salsa


  • 1 can (15oz) black beans drained and rinsed
  • 1 cup frozen whole kernel corn
  • 11/2 cups of diced roma tomatoes
  • 1/2 cup each of diced bell peppers, red onion, and cilantro
  • 2 chopped jalapeno peppers (optional)
  • 2 cups of favorite chunky commercial salsa
  • 1/2 lime (juiced)


Mix all ingredients together in a bowl and chill for at least 4 hours to
Serve with favorite tortilla chips, with Mexican dishes, or over grilled
fish such as tuna, salmon, or swordfish.
