Ingredients

Meal Stack #1: Mountain Man Casserole w/Tombstone Turtles for dessert

  • 1 Lb. Mild Pork Sausage (Jimmy Dean)

  • 1 Bag Shredded Hash Browns (frozen)

  • 2 Dz. Eggs Whisked

  • 1 Onion Diced

  • 1 Red Pepper Diced

  • 1 Bell Pepper (green) Diced

  • 1 Clove Garlic Minced

  • 2 Lbs. Cheddar Cheese Shredded




  • Meal Stack #2: Double Duty Campfire Tacos Meal Stack

  • Taco shells (pre-formed/crispy)

  • Soft flour tortillas (small size)

  • Canned refried beans

  • Ground beef or ground turkey

  • Tomato

  • Can of corn

  • Lettuce

  • Shredded cheddar cheese

  • Sour cream

  • Guacamole

  • Salsa

  • Black olives



  • Meal Stack #3: Pig Wrapped in Pig
  • Bone-less pork tenderloin

  • Bacon



  • Tombstone Turtles

  • 1 (4 ounce) Package crescent roll dough

  • 4-6 Caramels

  • 1/4 Cup semi-sweet chocolate chips or milk chocolate chips

  • 4-6 Pecan halves, coarsely chopped

  • Directions

    Meal Stack #1: Mountain Man Casserole w/Tombstone Turtles for dessert
    Brown sausage in preheated pot.
    Remove browned sausage and allow to soak on paper towels.
    Leave about 2 Tbsp. of oil in pot.
    Add onions.
    Cook and stir until onions are transparent, return sausage to pot.
    Add layer of hash browns topped with peppers.
    Repeat until all hash browns and peppers are in pot.
    Cook until potatoes are done.
    Stir meat, potatoes, onions and peppers thoroughly.
    Pour beaten eggs on top of mixture, making sure eggs are evenly spread across the top.
    Cook for 10 - 15 minutes over medium heat or until eggs set.
    Liberally cover with cheese.
    Replace pot lid.
    Place coals on top of cover to cook evenly from top and bottom of pot.
    Bake until cheese is melted approx. 10 - 12 minutes.
    Remove pot lid.
    Dump coals back into fire away from pot.



    Meal Stack #2: Double Duty Campfire Tacos Meal Stack

    I prefer to cook the ground beef or ground turkey at home, with a little salsa added for flavor. Spice it to your families taste with chopped onion or taco seasoning added. I then freeze it in a zip lock bag. You may choose to cook the meat while camping, in a fry pan over your camp-stove. Either works well.



    To prepare the fillings:
    Open the can of refried beans and corn (leave liquid).
    Set both onto a bed of coals, or wood fire, to heat thru, 5 minutes.
    Reheat till hot, or cook till done, the taco meat in a fry pan on your camp-stove.
    Shred the lettuce, chop the tomatoes, slice the olives. Set out all remaining ingredients around the table with serving spoons.
    Be sure to remove the cans of beans and corn from the fire pit with a hot pad.
    Spread one soft tortilla with a thin layer of refried beans.
    Set a crisp taco shell in the middle, and fold the soft tortilla around the crisp taco shell, to create a double layer taco.
    Fill taco shell with your favorite things. No plate needed, as the soft tortilla 'holds everything together'.



    Meal Stack #3: Pig Wrapped in Pig

    Wrap a bone-less pork tenderloin with thick bacon, making sure the whole thing is covered. Place on grate over open fire and turn occasionally. After about 45 minutes, when the whole thing looks burned, remove the bacon. The tenderloin will melt in your mouth! Make a packet on the side with potatoes, zucchini, yellow squash, onions, red pepper, and peas or green beans and you have a masterpiece with no clean up!!!


    Tombstone Turtles


    Unroll the crescent roll dough and divide in half.
    Each section will consist of two triangles.
    Roll out each half into a 5 x 8-inch rectangle.
    Cut in half to make four 5 x 4-inch pieces.
    Place one piece in each side of a buttered cooker.
    Top with half the caramels, chocolate chips and pecans.
    Close the cooker and cook 3-4 minutes over medium coals.
    Campfire turtles will be golden brown, gooey on the inside, and very rich!
    Repeat with remaining ingredients.

    Electric Sandwich Makers: Follow above instructions, cook just a few minutes in a preheated sandwich or snack maker until turtles are golden brown, and chocolate and caramel are melted.
