- 2 c pre-cooked white corn meal (P.A.N.)
- 2 1/2 c water
- 1 tsp salt
- 1 tsp sugar
Pour 2 1/2 c water in medium bowl. Add salt and sugar, then slowly add white corn meal. Knead until smooth and firm. Hand mold cakes to form 2 1/2"x1". Place cakes on slightly greased hot plate or skillet. Allow a hard crust to form before flipping. When a hard crust forms on opposite side, remove from heat and place in oven at 350 F. until completely done (Approx. 10 to 15 minutes in oven).
When cooled cut side of cake to center to form an open pocket, similar to pita style. Fill with white cheese "queso fresco" and ham, or any desired sandwich favorites.
Heat vegetable oil in deep skillet. Slice ripe plantains and fry until brown on both sides. No seasoning required. Great with ice cream, caramel or rum sauce, or by themselves!
