- 1 can black beans, drained, but not rinsed
- 1 15-ounce can of whole kernel corn, drained
- 2 cans of diced tomatoes and green chilies
- 1 chopped red bell pepper
- 1-2 chopped fresh jalapeno peppers, remove seeds
- 1 red onion, chopped
- 1 bottle of light Italian dressing (don't always need entire bottle)
Combine all ingredients in a large bowl. Stir gently. Fridge overnight.
