Roasted Root Veggies

Ingredients


  • 6 small to med red skinned or new potatoes

  • 4 med turnips peeled

  • 1 large sweet onion

  • 1 small package of button mushrooms

  • 1 pound of baby carrots peeled and cleaned

  • 1 cup olive oil

  • favorite dried or fresh herbs to taste

  • salt and pepper to taste

Directions

Preheat oven to 350
Cut veggies in equal sizes and toss with olive oil and seasonings.
