Tuna Stuffed Grilled Tomato


  • 8 large whole tomatoes

  • 1 stalk fresh celery, chopped

  • 1 small yellow onion, chopped

  • 1 small can sliced black olives, drained

  • 3 cans fancy Albacore tuna, drained

  • 1 1/2 cup blue cheese dressing

  • 1 bag cheddar cheese

  • salt and pepper to taste


Cut of tops of tomatoes and scrape out middle, leaving about 1/4 inch thick shell. Place tomatoes in muffin pan. In large bowl, combine celery, onion, black olives, blue cheese, tuna and salt and pepper and mix well. Stuff peppers to top with tuna mixture. Top off with cheddar cheese. Bake or grill at 300 degrees for 15 minutes or until done.
