Apple Cider "Doughnuts"

Ingredients

  • 2 cups all-purpose flour
  • 1&1/2 teaspoons baking powder
  • 1&1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1&1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 large egg, slightly beaten
  • 2/3 cup packed brown sugar
  • 1/4 cup apple butter
  • 1/3 cup maple syrup
  • 1/3 cup apple cider
  • 1/4 cup vanilla yogurt
  • 1/2 cup butter, melted

Directions

Apple Cider Glaze:
  • 1 cup confectioners' sugar
  • 1/4 to 1/3 cup apple cider
  • Whisk until smooth



Preheat oven to 400 degrees F. Coat the molds of two mini-Bundt pans with nonstick cooking spray. In mixing bowl, whisk flour, baking powder, baking soda, salt, cinnamon, & nutmeg. Set aside. In another bowl, whisk egg, brown sugar, apple butter, maple syrup, cider, yogurt & butter. Add the dry ingredients to the wet ingredients and stir just until moistened. Spoon about 2 heaping tablespoons of batter into prepared mold smoothing the surface. Bake for 10 to 12 minutes, or until the tops spring back when touched llightly. Loosen edges and turn out onto a wire rack. Cool completely and drizzle with glaze. (follows) Makes one dozen.
