Meal Stack - August 22, 2005


This is not a Meal Stack in the traditional sense; this is your artillery
against the drive-thru. Being armed with these delicious quick to make
specialty sandwich ideas gives you drive-by power. So don't drive-thru
after practice, drive home and enjoy one of these delicious quick to make sandwich recipes!!!


Meal Stack #1: Texicali Wraps

  • Red Onion, Chopped
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 tomato, large and diced
  • juice of ½ lime
  • 1 T. fresh chopped cilantro
  • Lettuce, chopped
  • Mayonnaise to taste
  • 1 can (4oz.) diced green chilies
  • choice of smoked ham or turkey
  • flavored tortillas

1) Combine first 10 ingredients in a bowl.

2) Spoon mixture down center of tortilla.

3) Fold like a burrito. Fasten with toothpicks; cut in half and serve.

Meal Stack #2: Pita Athena

  • sliced roast beef, deli
  • pita bread, pocket
  • red onion, sliced
  • feta cheese, crumbled
  • prepared tzatziki, ( yogurt cucumber sauce)

1) Lay roast beef inside pita pocket.

2) Top with remaining ingredients and serve

Yogurt Cucumber Sauce
  • 2 cups plain yogurt
  • 1/2 cucumber ,peeled, grated, drained
  • 2 cloves garlic, crushed
  • juice of 1/2 lemon, about 1 to 1 1/2 tablespoons
  • salt and white pepper, to taste
  • pinch ground cayenne pepper

Meal Stack #3: Ham & Havarti w/Caramelized Apple Onion Sauce served on a
French Roll

  • French rolls
  • caramelized apple onion sauce
  • romaine lettuce
  • havarti cheese
  • smoked ham

1) Spread both sides of roll with apple onion sauce.

2) Layer lettuce, cheese and ham over bottom of bun.

3) Place bun over ham.

Caramelized Apple Onion Sauce

1) Sauté diced onion in butter until golden brown. Add diced apples and
continue to sauté an addition 2 minutes. Remove from heat and add 8 oz.
honey mustard. Refrigerate until needed.

Meal Stack #4: Sweet Honey Ham & Spinach Dip Sandwiches

  • Hawaiian sweet bread, sandwich
  • deli spinach dip
  • leaf lettuce leaves
  • pound sliced honey ham
  • slices Swiss Cheese, cut in half

1) Cut bread in half.

2) Spread spinach dip over 1 side of the bread.

3) Layer lettuce, ham and cheese halves.

4) Top with remaining bread slice.

Meal Stack #4: Ranch and Bacon Club Wrap

  • wrap bread (flat out or mission wraps)
  • ranch salad dressing
  • lettuce leaves
  • 1/2 pound sliced deli turkey breast
  • slices American Cheese
  • 1/2 pound sliced deli honey ham
  • slices Swiss Cheese, cut in half
  • 8 slices tomato
  • 8 slices crisply cooked bacon

1) Spread ranch dressing in center of wrap.

2) Layer down the center of wrap lettuce, turkey, American cheese, ham,
swiss cheese, tomatoes, remaining lettuce and bacon.

3) Burrito wrap, cut in half and enjoy.

Bonus Dessert: Crockpot Peach Crumble Cake

  • 2 cups frozen peaches
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla
  • 1/4 cup brown sugar
  • 1/4-1/2 teaspoon cinnamon
  • 1 box Jiffy white cake mix (or 1/2 package of a 2-layer size cake mix
  • 4 tablespoons melted butter

1. Lightly grease the slow cooker/Crock Pot; place peaches in the bottom.

2. Sprinkle with cornstarch; toss.

3. Drizzle with vanilla and sprinkle brown sugar over all.

4. Sprinkle with cinnamon then cake mix.

5. Drizzle melted butter evenly over cake mix.

6. Cover and cook on high for 3 to 3 1/2 hours.
