All Seasons Zinfandel Glazed Cornish Hens


  • 2 Fresh Cornish Hens, thawed
  • 1 1/2 cups red zinfandel wine
  • 3 T sugar
  • 3 T red wine vinegar
  • salt and pepper to taste


Combine the wine, sugar and vinegar in a sauce pan. Cook slowly over medium
heat until thick. Sprinkle hens with salt and pepper, then place on V-rack
or grill pan. Grill on medium heat for approx. 45 minutes. Apply wine
glaze once hen is 70 percent done. Continue cooking until done.
