Monday October 9, 2005 - Your Very Own Signature Chili Meal Stack


Basic Chili:

5 lbs. ground beef

3 packages chili seasoning of choice (McCormick’s, Lawry’s, Brooks, French)

1 can (32 oz.) diced tomatoes or tomato sauce or whole tomatoes (undrained and broken up) check your chili seasoning packet

1 onion, diced

Salt & pepper

Prepare chili as directed on seasoning package. Create your very own signature chili by selecting your favorite add ins (5-7 add ins should do the trick). Don’t hold back, be bold and daring and prepared to do a lot of taste testing; remember you are creating your very own Signature Chili, combine the flavors you think will compliment each other the best.

Add Ins:

1 bottle Dark Mexican Beer

Chorizo (Mexican sausage)

Pork sausage

Onion, diced

Tomato paste

Bell pepper, diced

Tomatoes, chopped

Beef bouillon cubes

Beef stock

Chicken bouillon cubes

Chicken stock


Chili powder

Ground coriander

Ground cumin


Dry mustard

White vinegar

1 T. semi sweet baking chocolate or 4 ½ oz. milk chocolate candy bars

1 t. vanilla extract

Stewed tomatoes

2 t. lime juice

½ t. monosodium glutamate

Kidney beans

1 c. strong brewed coffee

Pinch brown sugar

3-4 T. sugar

¼ c. honey

Crushed red pepper flakes


Crushed pork rinds


  • Kosher salt
  • Unsalted butter
  • Soy sauce
  • Salad dressings (opt. side)
  • Salad fixings (opt. side)
  • 6 large russet potatoes
  • Extra sharp cheddar cheese
  • Sour cream (opt. garnish)
  • Salsa (opt. garnish)
  • Maytag blue cheese
  • Parsley leaves (opt. garnish)
  • Elbow macaroni
  • 1 can red kidney beans
  • 1 can tomato sauce
  • 1 can whole kernel corn
  • 1 can cream style corn
  • 1 pkg. Corn bread mix
  • 1 bag salad (opt. side)
  • Fresh fruit (opt. side)

*Chili is unique in the fact that it can be used to enhance every meal.
  • Top scrambled eggs with chili and salsa
  • Add a cup of chili to quiche before baking
  • Scramble eggs and add chili and Fritos
  • Add chili to a breakfast burrito

Meal Stack #1: Chili Stuffed Baked Potatoes with Crumbled Blue Cheese

  • Kosher Salt
  • ½ stick Unsalted Butter
  • 1 T. Soy sauce
  • 6 large russet potatoes, scrubbed
  • 3 c. reserved Signature Chili
  • 1 ¼ c. shredded extra sharp cheddar cheese
  • Sour cream (opt. garnish)
  • Salsa (opt. garnish)
  • Maytag blue cheese
  • Parsley leaves (opt. garnish)

Scrub potatoes, rub with melted butter and soy sauce and rub with kosher
salt and bake directly on rack in the center of the oven and bake until easily pierced with a fork. About 1 hour.
Gently scrape most of the potato pulp out of the lids and transfer to a
large bowl (save pulp for a delicious potato soup). Reserve the lids.
To serve: Ladle the chili over the potatoes; sprinkle with a combination
or extra sharp cheddar and blue cheese. Garnish with parsley.

Meal Stack #2: Old Fashioned Chili Mac Casserole

  • Salt
  • ¾ c. uncooked elbow macaroni
  • 3 c. reserved Signature Chili
  • 1 can (8 ½ oz.) whole kernel corn, drained
  • 1 can (8 oz.) red kidney beans, drained
  • 1 can (8 oz.) tomato sauce
  • ¼ c. shredded cheddar cheese

Cook macaroni according to package directions. Drain.
Meanwhile reheat Signature Chili. Add corn, red kidney beans and tomato
sauce to Signature Chili.
Stir in cooked macaroni. Top with shredded cheddar cheese and bake at
350° for 25 minutes.

Meal Stack #3: Chili Corn Bread Casserole

  • Salt
  • 3 c. reserved Signature Chili
  • 1 can (8 ½ oz.) cream style corn
  • 1 can (8 oz.) red kidney beans, drained
  • 1 box corn bread mix

Reheat Signature Chili; add beans, creamed corn and pour into greased 3
quart casserole. Prepare corn bread as directed on package and pour over Signature Chili. Bake in preheated 350° oven about 30 minutes.
