The Gourmet Cafe's Wilted Spinach with Cider and Country Ham


  • 9 oz spinach
  • 1/4 c. shredded carrots
  • 1/2 c. country ham
  • 1/4 c. diced onion
  • Olive oil
  • Salt and pepper to taste


Put 1 T olive oil in skillet with onions until translucent. Add ham and cook until onion begins to caramelize. Add 3/4 cup apple cider and top with all of spinach. Cover and steam until spinach is wilted, approx. 5 min.
