The Gourmet Cafe Roasted Root Veggies with Apple Cider Glaze


Roasting vegetables:

  • 2 lbs. assorted root vegetables (ex: carrots, parsnips (peeled), onions, sweet potatoes, etc.)

Coat with olive oil, salt and pepper to taste. Place in roasting pan and roast at 375 degrees for approx. 15 mintues. Stir and roast for another 15 minutes. Remove from oven apply glaze and roast until fork tender.

Apple Cider Glaze:

  • 1/4 c. brown sugar
  • 1 c. apple cider

Bring both ingredients to a boil in saucepan. Reduce by 1/2.
