All Seasons Spiced Prime Rib

Ingredients

  • 8 lb bone in standing Rib Roast
  • 1 T chopped garlic
  • 1 T chopped parsley
  • 1 T chopped rosemary
  • 2 T chopped thyme
  • 2 T black pepper
  • 4 T olive oil
  • 2 1/2 T kosher salt

Directions

Mix all ingredients and coat all sides of roast. Cook on V-rack with catch pan slowly over low heat for 2 1/4 hours or until 130 degrees internal temperature (medium rare). Cover with foil and let rest 20 to 30 minutes before slicing. Serves eight.
