Vincent's Bagels and Bites Taco Soup


  • 2 lbs ground beef
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 2 15oz. cans black beans
  • 1 64oz. jar salsa
  • 1 46oz. can tomato juice
  • 2 packets taco seasoning
  • 1 1/2 cups minute rice
  • Sour cream
  • Shredded cheddar cheese
  • Corn chips


Brown ground beef in skillet with green pepper and onion. When fully cooked, drain and return meat and veggies to skillet. Add taco seasoning packets along with 1 cup of water and simmer for about 10 minutes.

In a large soup pot, combine salsa, tomato juice, black beans and meat. Simmer on medium for about 30-45 minutes. Add rice and continue cooking for 10 minutes.

Garnish with corn chips, shredded cheese and a dollop of sour cream.
