Peach Skillet Cake



  • 2 Peaches, Sliced
  • 2 Egg Yolks
  • ½ Cup Sour Cream
  • 1 Tsp Vanilla Extract
  • 1 Cup Sugar
  • 1 ½ Cups Flour
  • ¼ Tsp Baking Powder
  • 1/8 Tsp Baking Soda
  • 1/8 Tsp Cinnamon
  • ¾ Stick Butter
  • ¾ Cup Pecan Halves


Mix egg yolks, sour cream and vanilla until well combined. Add sugar and mix thoroughly. Sift flour, baking powder, baking soda & cinnamon together and slowly add to the egg mixture until well combined. Melt butter in 2 qt. Cast iron skillet and pour into cake batter. Add pecans and blend.
Warm the peaches in the skillet pour in cake batter slowly and spread evenly.
Cook over low heat on a covered grill for 25 to 30 minutes.
Soften ice cream, whisk in bourbon and drizzle over each serving of cake.
