Smoked Turkey Reuben with a Twist


1/2 c mayo

2 T ketchup

2 T finely chopped shallot

2 T sweet pickle relish

1 tsp Dijon mustard

8 slices pumpernickel bread

1 Granny Smith Apple, cored and thinly sliced

1/2 lb sliced smoked turkey

1 cup drained sauerkraut

6 oz Gruyere or Jarlsberg cheese


Whisk together mayo, ketchup, shallot, relish and mustard in a bowl; season with salt and pepper. Spread mayo mixture on one side of each bread slice. Layer apple and turkey slices on half of bread, mayo side up. Top with sauerkraut, cheese and remaining bread, mayo side down.

Broil in oven until cheese melts and bread is golden brown.
