Chicken Marengo

Ingredients

  • 4 boneless chicken breasts
  • 1/2 lb sliced mushrooms
  • 1 medium onion
  • salt and pepper to taste
  • 1 tsp chopped garlic
  • 1 1/2 cup tomato sauce
  • 1 tomato
  • 4 oz butter
  • 1/2 cup chardonnay
  • all purpose flour
  • parsley and lemon slices

Directions

The process: Chicken breasts are lightly floured and sautéed till delicately browned on both sides. Then, finely sliced onions and mushrooms are added, and a minute later chopped tomato. Cook for one to two minutes on medium heat and then add garlic, wine, salt, pepper, and tomato sauce. Simmer all this for about 4-5 more minutes, and when you’re sure that the chicken is completely done, take it off the heat and add butter, stirring till blended with the sauce. Parsley may be added as well as sweet basil. It goes very good with boiled rice accompanied by the remaining sauce. If more butter is added, it brings out a better flavor, and for the calorie conscious, skip the butter, and you have a rather healthy, hearty meal. Serves two to four people.
