Pork Roulade

Ingredients

  • 8 oz pork loin or tenderloin
  • 3 oz sun-dried tomatoes
  • 4 oz dried figs, chopped
  • 1 ea Granny Smith apples
  • bacon
  • black pepper mix
  • 2 cups Port wine, reduced by half

Directions

  1. Butterfly the pork.
  2. Pound semi-flat.
  3. Place chopped figs and sun-dried tomatoes on pork .
  4. Roll into place.
  5. Season with black pepper mix.
  6. Wrap with bacon.
  7. Bake for 15-18 min. at 375 degrees or until done.
