Eggplant Parmesan

Ingredients

  • 2 large eggplants, sliced
  • 2 tbs garlic
  • 1/2 cup diced tomatoes
  • 2 tbs fresh basil
  • 4 cups vegetable stock
  • 2 cups egg wash
  • 4 cups fresh marinara
  • 2 cups mozzarella
  • 2 cups fresh parmesan
  • 2 cups extra virgin olive oil

Directions

  1. Preheat oven to 450.

  2. Place eggplant in egg wash, then place in hot skillet with oil. Sear on both sides.

  3. Add garlic, diced tomatoes, basil and marinara. Deglaze with vegetable stock.

  4. Line eggplant up on each other and sprinkle with parmesan and mozzarella cheese. Place in oven for 3-6 minutes.

  5. Let cool and serve.
