Red and Yellow Cherry Tomatoes, Cut in Half
Herbed Goat Cheese
1 Sheet of Puff Pastry
2 Eggs, Beaten
Preheat oven to 375 and grease one baking sheet.
Take the sheet of puff pastry and roll it out to half the thickness.
Cut puff pastry into 4”x3” rectangle shapes. Fold up ¼” of each side puff pastry, so that it forms a barrier for all of the filling.
In a bowl, mix together tomatoes and herbed goat cheese. Spoon on the filling onto each puff pastry rectangle.
Brush the folded up sides puff pastry with egg wash and bake until golden brown, about 15-20 minutes.
