Three Cheese Vegetarian Chili

Ingredients

  • 2 lg. onions, diced
  • 2 Tbsp. butter
  • 1/4 cup tomato paste
  • 1 Tbsp. chili powder
  • 1 Tbsp. cocoa powder
  • 1 tsp. cumin seed
  • 2 med. carrots, chopped
  • 2 ribs celery, sliced
  • 2 small jalapeno peppers, minced
  • 1 can crushed tomatoes
  • 2 cups canned black beans
  • 6 to 12 oz. tomato juice
  • 1 cup shredded Mozzarella cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp Cheddar cheese

    Directions

    1. Saute onions in butter over medium heat.



    2. Add tomato paste, chili and cocoa powder



    3. Add cumin and cook until dark brown



    4. Stir in carrots, celery and jalapenos.



    5. Add tomato juice; simmer for an hour.



    6. Stir in Mozzarella and Monterey Jack cheeses.



    7. Top with shredded Cheddar cheese.
