Turkey and Rice Pancakes


1 (6.2 oz) Uncle Ben’s Long Grain and Wild Rice, prepared
(you will use 1/2 box or

1 cup cooked, diced turkey

1/4 cup thinly sliced green onion

1/4 cup biscuit mix

1 egg, beaten

1/4 cup milk


3/4 cup whole berry cranberry sauce
1 tablespoon brown mustard

Cook rice according to package directions and cool. You will need 1 1/2 cups for this recipe.

Combine rice, chicken, green onions, biscuit mix, eggs, and milk in a small bowl. Refrigerate for 1 hour.

Drop 1/3 cup of the mixture for each pancake onto a hot nonstick skillet coated with cooking spray. Cook 2-3 minutes on each side or until lightly brown.

For sauce combine the cranberry sauce and the mustard. Serve with the pancakes.
Serves 4.
