DAVE’S FAVORITE “BEER CAN” TURKEY

Ingredients

  • 1 WHOLE YOUNG TURKEY
  • JOHN HENRY’S TAMMY’S HERBAL (OR ANY SAGE MIXTURE)
  • OLIVE OIL
  • 4 CUPS CHICKEN BROTH
  • 1 BEER OF CHOICE

    Directions

    WASH & CLEAN BIRD AND REMOVE PARTS AND PIECES AS WELL AS EXCESS SKIN AROUND NECK AND TAIL (THIS CAN BE USED TO MAKE CHICKEN BROTH). ON CUTTING BOARD, CAREFULLY SLICE SKIN OVER BREAST AWAY FROM MEAT KEEPING SKIN INTACT. MIX OLIVE OIL AND TAMMY’S HERBAL TOGETHER AND POUR OVER MEAT. REPLACE SKIN AND PUSH MIXTURE INTO REMAINDER OF CHICKEN. PLACE CHICKEN ON “TURKEY UP” OR “V-RACK” OVER CATCH PAN. OIL OUTSIDE SKIN AND SHAKE AS MUCH TAMMY’S HERBAL ONTO SKIN AS POSSIBLE. PLACE ON GRILL AND PUT EQUAL PARTS OF BEER AND BROTH INTO CATCH PAN. COOK ON LOW TEMPERATURES (250-300 DEGREES) APPROX 1 HOUR FOR EVERY 2 LBS OF BIRD.
