Sweet Potato Biscuits with Country Ham
2 1/2 cups baking mix
1/3 cup butter or margarine, softened
1 cup mashed cooked sweet potato
3 teaspoons light brown sugar, divided
1/2 cup milk
1 6-oz package pre-sliced country ham
Heat the oven to 450°F. In a medium sized bowl stir all ingredients (minus 1 teaspoon brown sugar) until soft dough forms.
Using a tablespoon, spoon out a heaping spoon of biscuit mixture onto a baking sheet coated with cooking spray. Repeat leaving about 1 inch between the biscuits. Bake the biscuits for 8-10 minutes or until browned. Once removed from oven, sprinkle remaining brown sugar over the biscuits.
While the biscuits are cooking. Cut ham sliced into thirds. You should have around 24 pieces. Brown ham slices in a hot pan on both sides and set aside.
When biscuits are cool, slice and add cooked ham slices. Makes 24. Serve with a honey mustard or home-made jam
