1 cup tropical trail mix
1/2 cup simply Jiff peanut butter
1/2 cup quick cooking steel-cut oats
1/4 cup raw sunflower seeds
1/4 cup shelled pistachios
1 tablespoon honey
2 tablespoons milled flaxseed
1 tablespoon cocoa powder
1 packet Splenda®
Place the tropical trail mix in a large bowl and break up the banana and coconut pieces. Add the peanut butter, oats, sunflower seeds, pistachios, and honey. Using a spatula blend the mixture thoroughly. Refrigerate for 10 minutes.
Meanwhile, in a small bowl combine the flaxseed, cocoa powder and Splenda®.
Remove the mixture and using a small scoop or tablespoon divide the mixture into 24 small balls. Roll each ball in the flax cocoa coating and place on a plate. Keep refrigerated in an airtight container for up to a week. Serving size 3 truffles. TIP: Place 3 truffles in snack size bags for “ready to go” easiness!
