Breakfast Casserole Wraps



Vegetable cooking spray
1/2 18-oz. package frozen Jimmy Dean Skillet Mix
1/2 cup shredded cheddar cheese
3 eggs, slightly beaten
1 cup milk
1/2 teaspoon salt (optional)
1/4 teaspoon black pepper
1 cup salsa
1 10 count pack small flour tortillas


Preheat oven to 350 degrees. Coat an 8x8x2 inch casserole dish with the vegetable cooking spray. Place the Skillet mixture in the pan and sprinkle with the cheddar cheese. In a small bowl beat the eggs with the milk, salt and pepper and pour over the mixture. Bake casserole for 40-45 minutes until the eggs are set. Remove and let “rest” for 5 minutes before cutting. Cut the casserole in half then cut so that you have 10 slices that will fit the tortillas. Place a slice in each tortilla and top with a 1 tablespoon of salsa. Place on a napkin and heat the tortilla for 30 seconds in microwave. Make 10. TIP: These can be made ahead by placing the sliced casserole in the tortilla and rolling up and putting in a plastic baggie and freezing. Put in the refrigerator the night before and microwave in a paper napkin just before serving with the salsa in the wrap.
