Custard French Toast w/ Bananas Foster Sauce


  • 1/2 cup packed Brown Sugar
  • 1/8 cup water
  • 1T Rum Flavor, or 4 T Dark Rum
  • 4T Butter Unsalted
  • 2 bananas sliced into 1/4” thick coins
  • 1 Stale French Bread Loaf, bias cut into 1” pieces (should be done 1 day ahead)
  • 1 pint Half and Half
  • 4 Eggs lightly beaten
  • 2T Sugar
  • 1 teaspoon Vanilla
  • 1/2 teaspoon Cinnamon
  • 3T Canola Oil, or vegetable oil
  • Whipped Cream, or Ice Cream (Optional)


    Make sure bread is cut and left out overnight till stale. Pre-heat oven to 325 de-grees. Mix half and half with eggs, vanilla, cinnamon, and sugar, then set aside. Dip stale French Bread slices in custard mix, and soak it up like a sponge. Place large skillet over med-high heat, and add the oil. Batch cook the French toast in the pan 2-3 minutes per side until all slices are golden brown, and place in the oven on a baking tray. Next, while Custard French toast is baking, make the Bananas Foster sauce. Add the brown sugar, water, rum, and butter to a small sauce pan. When sauce is bubbly hot (4-5 minutes) add the bananas and cook 2 minutes more. Remove French toast from oven and serve with some of the Bananas Foster Sauce over the top. Ice Cream, or Whipped Cream Op-tional.
