• ½ to 1 pound fresh asparagus, rough ends trimmed
• 2-3 tablespoons olive oil
• Salt and pepper to taste
Toss asparagus with olive oil and salt and pepper. Place in single layer on foil-lined baking sheet and roast in 400 degree preheated oven for 5-10 minutes or until crisp-tender
TO PLATE: Lay asparagus in center of plate with tips facing the same direction.
Place a mound of sweet potatoes in center of asparagus and top with fish. Drizzle plate w/Orange Thyme vinaigrette and place Pineapple salsa on top of fish.
