ALL SEASONS SALMON W/ BASIL CREAM SAUCE

Ingredients

ALL SEASONS SALMON

  • 4 – 6 OZ. SALMON FILETS WITH SKIN ON ONE SIDE
  • ¼ CUP – SQUEEZED ORANGE JUICE
  • ¼ CUP – SOY SAUCE
  • ½ CUP – RUM
  • 3 TBS – BROWN SUGAR
  • 2 TSP – MINCED ONION
  • 1 CLOVE – CRUSHED GARLIC
  • 1 TSP – CATSUP
  • ¼ TSP – CORIANDER SPICE
  • ¼ TSP – DRIED RED PEPPER FLAKES

    BASIL CREAM SAUCE

  • 2 TBS – MELTED REAL BUTTER
  • 1 TBS – CHOPPED GREEN ONION
  • ½ CUP – DRY WHITE WINE
  • 1 CUP – HEAVY CREAM
  • 2 TBS – CHOPPED BASIL
  • SALT AND PEPPER TO TASTE

    Directions

    OVER MEDIUM HEAT, COMBINE BASIL, ONION AND BUTTER FOR 2-3 MINUTES. ADD WINE AND SIMMER APPROX. 10 MINUTES. ADD CREAM, BASIL, SALT AND PEPPER AND SIMMER ADDITIONAL 10 MINUTES. SERVE AT ROOM TEMPERATURE OVER FISH.

    BRUSH GRILL GRATES WITH OIL TO PREVENT STICKING AND PREHEAT AT MEDIUM TEMPERATURE (APPROX 325 DEGREES F). PLACE SALMON ON GRILL, SKIN SIDE UP, FOR 3 TO 4 MINUTES WITH LID CLOSED. TURN OVER, PLACE SKIN SIDE DOWN ONTO SHEET OF ALUMINUM FOIL AND CONTINUE COOKING FOR 11 TO 14 MINUTES WITH LID CLOSED. SERVE HOT WITH LEMON WEDGES AND ROOM TEMPERATURE BASIL CREAM SAUCE.
