The Bistro "Halibut"


  • 8oz fresh Halibut
  • 1oz fresh garlic
  • 1oz fresh tomato
  • 1oz artichoke hearts
  • 1tsp garlic
  • 1tsp capers
  • 5oz asparagus
  • 1oz champagne
  • 1tsp butter


    Preheat skillet. Add olive oil and cook fish on one side for approx. 2 minutes. Flip the fish and take it out of the skillet, lay to the side. Then add garlic, tomato, artichoke hearts, capers and asparagus to skillet. Cook for approx. 2minutes. Deglaze ingredients in skillet by adding champagne. Then add fish and butter. Cook for approx. 2 minutes or until fish is cooked through.
