Cajun Poached Salmon

Ingredients

  • 1 Side of Salmon, Skinless
  • ½ cp. Cajun Seasoning
  • 1qt Court Bullion
  • 2oz Clarified Butter / Bacon Fat

    Directions

    Rub down both sides of the salmon with Cajun seasoning. In a roasting pan, heat butter / fat until smoking point. Sear off both sides of the salmon until “Blackened” & remove. Add Court Bullion to pan & bring to a simmer. Place Salmon into simmering liquid & cover with lid or alum. foil. Cook in simmering liquid for about 20min. or until 165 degrees.
