Blackened Tilapia on Kaiser Roll

Ingredients

  • 2 lbs. Tilapia fillets
  • 1 stick melted butter in shallow bowl
  • ¼ cup olive oil
  • ½ stick butter

    Blackening:
  • ¼ cup paprika
  • 2 tablespoons thyme
  • 2 teaspoons onion powder
  • 1 teaspoon garlic salt
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper

    Combine in shallow bowl.

    Cilantro Mayonnaise
  • 1 cup mayonnaise
  • ¼ cup fresh finely chopped cilantro
  • 1Tablespoon lime juice

    Mix well and spread on toasted Kaiser roll


    Directions

    Dip fish in butter and coat both sides in blackening. Fry in melted butter and olive oil (I always use a cast iron skillet) heated to medium high heat until tender (approximately 3 minutes per side) and serve on Kaiser roll with cilantro mayonnaise. *recipe follows
