Carrot Cake w/ Cream Cheese Frostin

Ingredients

Carrot Cake

  • 1½ cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1½ cups plain flour
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1½ teaspoons soda
  • 2 cups shredded raw carrots
  • ½ cup coconut
  • ½ cup chopped pecans

    Cream Cheese Frosting

  • 8 ounces of softened cream cheese
  • ½ stick softened butter
  • 1 lb powdered sugar
  • ½ teaspoon vanilla

    Blend together and beat all ingredients until smooth.

    Directions

    Preheat oven to 325º. Line two 9” cake pans with parchment or wax paper. Mix sugar, oil and eggs. Mix dry ingredients then add to eggs and mix well. Add rest of ingredients and mix until well blended. Divide batter evenly in the cake pans. Bake at 325º for 40 to 45 minutes. Cool in pans for 10 minutes. Turn out on cooling rack and remove paper. Allow to cool completely before frosting.
