Tennessee Brunch

Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 6-8 hard cooked eggs
  • 1/2 cup mayonnaise
  • Cornbread squares
  • 3-4 chopped green onions
  • 1/2 lb. cooked bacon
  • 3/4 cup shredded cheese

    Directions

    1. Make white sauce by mixing butter, flour and milk.



    2. Add salt, pepper, eggs and mayo. Mix.



    3. Heat until eggs and mayo are hot.



    4. Slice cornbread squares in half and spoon egg mixture over top.



    5. Garnish with green onions, bacon and cheese.
