South Western Grilled Chicken Soup

Ingredients

  • 12-14 oz. chicken
  • 1/2 green pepper, diced
  • 1/2 red pepper, diced
  • 1 whole onion, diced
  • 1 cup corn
  • 2 cans diced tomatoes
  • 1 cup rice, cooked
  • 48 oz. can tomato juice
  • 1 can black beans
  • 3 Tbsp. chili powder
  • Salt, pepper, garlic to taste

    Directions

    1. Season chicken with salt, pepper, and garlic, grill, then dice into cubes.



    2. Simmer tomato juice, onions, peppers, tomatoes, corn, seasonings for approximately 35 - 45 minutes, add already cooked rice and chicken at the last 10 minutes of cooking.
