Mexican Bean Burritos

Ingredients

  • 8 8" tortillas
  • 2 cans black beans, drained and rinsed
  • 1/2 cup non-fat sour cream
  • 4 oz. low fat cheddar cheese, shredded
  • 1 1/2 cup salsa

    Directions

    1. Mash black beans. Add salsa and combine well.



    2. Place a large spoonful of black bean and salsa mixture in tortilla. Add a dollop of sour cream and some cheese. Roll into a burrito.



    3. Use remaining ingredients and roll 8 tortillas. Place seam side down in casserole dish and sprinkle remaining cheese on top.



    4. Bake in a 350° oven for 20 minutes.
