1 lb. Kentucky’s Finest Smoked Sausage
1 Large Onion
5 slices Broadbent’s Hickory Smoked Pepper Bacon
2 Cans Black-eyed Peas
2 Tbsp. Sausage Fat, Bacon Fat or Olive Oil
2 Tbsp. Southern Delight Basil & Oregano No-Salt-Added Italian Seasoning Blend
1 tsp. Salt Substitute
1 Tbsp. Coarse Black Pepper
1 C. Long Grain Brown Rice
12-14 C. Water
Great for stove top or in the crock-pot. If preparing using a crock-pot, brown the meat in a skillet. If preparing on stove top in a dutch oven or stock pot, brown meat in the same pot (fewer dishes to wash!). Cook, drain and crumble Kentucky’s Finest Smoked Sausage and set aside, reserving 2 Tbsp. of the sausage fat.
Cut 5 slices of bacon in ½” pieces, dice 1 large onion, 2 Tbsp. Sausage Fat. Bacon Fat or Olive Oil, sauté until bacon is done, and onions are translucent. Add 2 Tbsp. Basil & Oregano Classic Italian Seasoning Blend, 2 cans Black-eyed Peas, 1 C. Long Grain Brown Rice and 10-12 cups of Water, stir and turn to low. If cooking in crock-pot, transfer bacon and onion (including the fat) to 5 qt. crock-pot, adding the Seasoning, Peas, Sausage, Rice and Water. Simmer for 45 min – 1 hour, or on low in crock-pot for 4-6 hours. Serve with Heart Healthy Country Cornbread. Serves 12. Enjoy!
