MIMI’S CHICKEN SOUP

Ingredients

  • 1 small onion
  • 2 or 3 whole cloves
  • 1 cup cooked, diced chicken
  • 2 quarts chicken broth
  • ½ tsp. salt
  • 1 T parsley
  • 3 shredded carrots
  • ½ cup chopped celery
  • 1-8 oz pkg tortellini or egg noodles, using half package

    Directions

    Peel and cut ends off onion; insert whole cloves into the onion. In a large pot, combine onion, chicken, broth, salt, parsley, carrots, and celery. Bring to a boil; reduce heat. Simmer uncovered for 1 ½ hours. Remove onion. Add half bag of tortellini or noodles and boil for 25 minutes more. Makes 4 servings.
