- 1/2 cup flour
- 1/2 cup cornmeal
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 6 green Kentucky Fresh Tomatoes
- 1/4 cup bacon drippings
Mix the flour, cornmeal, salt and pepper in a shallow dish. Cut the tomatoes into slices 1/2 inch thick.
Dredge in the flour mixture to coat. Fry in the hot bacon drippings until golden brown, turning once.
Yield: six servings
