Potatoes aren't potatoes until they are stuffed.
Medium to large potatoes
1. Bake potatoes. Cut potatoes in half, length-wise. Scrape potato out, preserving the shells. Mash.
2. Mix sour cream, bacon bits, chives, butter, salt and white pepper. Carefully add mixture to mashed potatoes.
3. Replace mixture in shells, and add Parmesan cheese to taste. Heat until bubbly.
